To answer your question, to prove undue influence you will need to show that there were suspicious circumstances surrounding the preparation of the will and:
1. the circumstances tend to call into question the capacity of the testator; or
2. the circumstances tend to show that the free will of the testator was overborne by acts of coercion or fraud.

This is a difficult legal threshold to meet. You should also be aware that estate litigation tends to be protracted and expensive.

I would suggest that you meet with legal counsel in person to discuss the matters relating to this in detail in order to assist you in coming to a decision as to what to do. Perhaps just the threat of litigation will assist in achieving some sort of settlement without the need to go to court.
