Firstly, the employer doesn't have to give you any reason for termination in letter. They don't have to write you a letter. All they have to do is give you a Record of Employment that notes the general category for your reason for non-employment.

The relationship between employer and employee is a contractual one. There's very little that the employer is required to do upon termination of the employee. Like any other civil case, the remedy is to go to court to sue for damages.

Employment law principles of wrongful dismissal are well established. Unless the employee is terminated for cause (such as stealing from or competing with the employer) then the employee is entitled to notice of termination. If that notice is not given then the employer ought to pay the employee their regular salary for that period.

Offering you a substantial pay cut or 1 year severance pay qualifies as a termination.

Take their offer to an employment lawyer. For not too much money that lawyer can write a letter to your former employer demanding more severance pay, and if this went to court I think you'd be entitled to it much more than the one year that's being offered. These matters usually settle quickly with a little negotiation.
