My 2001 Cadillac Eldorado shuts down at times when I'm driving. This happens most when I make a turn, like starting from a traffic light. Everything goes dead but when I stop and put it in park it will usually start

When you say everything goes dead, do you mean no power to radio or other accessories, which indicate electrical issue, likely the ignition switch.
Or do you mean that the engine just cuts off, which can indicate spark, fuel, sensor issue

Everything shuts off when this happens, instrument panel goes dark, radio goes off bur as soon as I put it in park it will start. There have been a couple of times when it will not start or turn over but after a miute of waiting it will turn over. I have noticed that this will happen most often when I make a turn lime at an intersection. I have noticed times when driving it will hesitate but keep going.

Ok, by the description, I suspect the ignition switch is faulty due to either a loose wire at connector or faulty contact in the switch
