While you can use the videocamera and it is better than nothing at all, it is still not as good as an NDA drafted by an attorney and would leave you open to issues. There are really too many issues to even cover but just a couple of examples are that they don't have a document they can have an attorney review before they sign it and so they can claim they didn't understand and then it is also extremely unlikely that you can be as comprehensive on video as you can in the NDA.
So it is better than nothing, but still leaves you open to issues down the road.
