Thermostat changed and ran without, same issue

Raw water impeller was good, still changed out for precaution, so all critical components changed and still heats

thermostat changed, still heats. Ran without thermostat, still heats. Next impeller was changed and existing was in good condition, still heats. Still heats at idle (takes 10 minutes) and at speed (3 minutes) have not checked risers. boat was running fine. No water in oil, only 120 hours on the boat. Sat in water a year with little attention. It has been exposed to both salt and fresh water, fresh for last 5 years. minimum corrosion on motor, pulleys, etc.

Jason;Name is will. 2006 four winns 278 Vista Bravo III. I have not felt the risers. If put a temp gun on them should they read around 160?
