Ok sure I believe your experiencing a lean bog even though I see you tried to choke. I think the choke you were applying was too much fuel. The short story of what is going on is this.
Now you say you tried the choke and this is a good test if you can tap it briefly but quickly so as not to over choke.
An even better test would be with the engine cover of and carb cover off to give short squirt sprays of carb cleaner up and down in the three carbs to see if this will help. If it does and you know the carbs are clean and set properly it is leaning out.

Ok sure I believe your experiencing a lean bog even though I see you tried to choke. I think the choke you were applying was too much fuel. The short story of what is going on is this.
- As the engine gets older it starts to get internal wear in areas that create a lean condition(block sealing rings,crankshaft seals,pistons,piston rings, and block cylinders) all but the block sealing rings and crankshaft seals can be checked with a cylinder leak down test(the best) or most use a compression test(just ok). The block sealing rings and or crank seals are the more likely to cause just this lean out on acceleration condition, although all wear is a contributing factor.
- Many manufactures and adjustable carburetor low speed jet to help richen up the mixture to compensate for the leaning out that was happening.But if you had to rich up too much to you would end up having also raising the idle speed to keep engine from killing.
- Unfortunantly Johnson and Evinrude had many years of building engine without any low speed adjustment screws on their carbs. This is why you hear of so many of them having the same issue.
- It is also unfortunate that the engine has to be torn down to determine if the block seals are bad and that the block is shot if this is the case as these seals are part of the block. The cranks seals will lean only the top or bottom cylinders and generally only at idle speeds unless the rubber is missing chunks.
- The carbs without the adjustable low speed jets still have replaceable low speed jets and transition hole in the carb that can be changed by someone very familiar with this process. It is time consuming to doe the job right so will likely be expensive to do.
Now you say you tried the choke and this is a good test if you can tap it briefly but quickly so as not to over choke.

Yes I believe this is what is going on.
The reason is has to warm up to fail is that the worn clearances will increase are the metal warms up.
I'm a little confused on your choke test and results.
If you are saying with engine warmed up and tapping on the choke while engine is bogging during acceleration helps then your compensating for a lean out condition. You could also try to raise the float level a bit to encourage a richer condition.
And yes I would not want you to do any testing which you would consider dangerous. It all depends on the boat application when we do the carb spraying
