Did you replace all of the gaskets in the carb including the mounting gasket? The carbs are bad about air leaks using old gaskets or not properly torquing the carbs down in an X pattern.
Spray some WD-40 around the base of the carbs while running, or trying to. If the rpms change the carbs are leaking.

Make sure you didn't mix up any of the jets.
Check that the carbs all close the same, that one isn't hung open.
Check for good spark on all 6 cylinders as well.
