VerifiedWelcome, your problem is the VST float is bad. You need to replace the needle. Run a fuel/water separator also, this is the main cause in the VST getting fouled up

VerifiedI don't think the vapor separator cover itself is going to make a difference. The only difference I'm seeing between the two is the vent / overflow fitting. On the 2.5L it is a straight fitting made into the cover. On the 3.0L it is a removable elbow fitting. All other parts are the same - fuel line fittings, float, needle, etc. What may have happened is Mercury was out of the 3.0L cover so a 2.5L cover was substituted by your dealer or they just ordered the wrong part. The change in the cover was likely made for a reason, but I couldn't tell you exactly what it is. To be safe examine the vent / overflow hose for anywhere it may be rubbing or chaffing against something. The change may have just been made for a different hose routing on the 3.0L. The installing dealer may be willing to change it out if you request, but it's likely not needed.
If the vent / overflow hose has fuel coming out of it you need to get it fixed. With the conditions you run in it's likely the needle, but could be the float or both. It could also be just the float adjustment, but if that were the case I would go ahead and replace the float.
