I'm sorry to read of your granddaughter's hen's condition.
There are a large number of possible disease processes that may cause symptoms similar to those you've described.
I'll need more information in order to be able to offer anything like a diagnosis for you. In order to gather that information, I'll need to ask a series of questions. helpfully we'll be able to offer an educated appraisal of what may be affecting your "grand hen".
Have the birds been wormed or treated for coccidia in the past several months?

This symptom is characteristic of difficulty in breathing. The more common causes of breathing difficulties are the following:
Infectious laryngotracheitis
Infectious bronchitis
Gapeworms
As the first two conditions tend to produce many more symptoms than what you're seeing, gapeworms would seem to be the most likely cause. Of course this is at best an educated guess. Without the benefit of a hands-on examination and testing, its the best I can offer.
You can get rid of gapeworms with Flubenvet, 1.2 g per kilo of feed for seven consecutive days.
If it is gapeworms, the improvement should be remarkable in a day or two.
If no improvement is seen then one of he other causes must be suspected. You can read descriptions (hopefully!) online by typing in the name of the disease followed by the words "in chickens".
