Hi, I have already filed for Chapter 7 bankruptcy in Seattle, WA. I have had my 341 creditors meeting.
I'm anticipating an EITC refund this year as well as an income tax refund. I'm aware that I can claim my income tax to an amount in my wildcard exemptions, but can I exempt my EITC fully? And where/what exemption rule on schedule C would I use?

You can any remaining wild card exemption that has not already been used. There no other specific exemption for that type of refund.
