As you are his children you can contest his will and seek a share of his estate.
Once the estate becomes hers she can do with it as she wishes. She can leave it to who ever she wants and there is nothing that you can do.
What state of Australia are you in? You will have to speak to a Solicitor that practices in the area of Succession Law and get more detailed advise on your possible success to contest based on the size of the estate and your own financial positions.
