My father and mother own their home. My father is very old and may not see the next couple of months. He refuses to do a will. He has other children to a previous marriage and they live in Vanuatu, New Caledonia and France.

When my father dies, will the assets automatically go to my mother, with no threat of loosing any of it to his previous kids? They are all adults now.

It will automatically go to your mother, as she is still alive.
