You have an oral agreement for the $3000 and you can also show that $3000 is taken out of your account.
What I suggest you do is draft an e-mail and confirm with him exactly what happened with a $3000 and the date at which is due to be repaid.
In the e-mail attach a document and advise that you would like him to sign it as per the agreement.
I would assume you will respond confirming that he received a $3000 and then either agree to sign the document or will simply refuse to sign.
Depending on his response and how he words and it may give you enough evidence to prove that he did receive a $3000.

The agreement should set out:
1. the names and addresses of the lender and the borrower
2. The amount that was borrowed
3. The period of the loan
4. Interest charged for the period
5. What happens if the money is not paid.
6. Details of any security given for the loan.
It should also give a short summary of how the money was given and the borrower should acknowledge that he has already received the money before the date of the document.
