You should write 'Australia'. The NDA would only apply throughout Australia, and not be recognized internationally by foreign courts if they did start marketing your business concept abroad.
The only thing you may want to do to prevent that is seek to include a term in the NDA stating they can be sued in Australia for a set sum of damages should they use the business concept outside Australia without your express written permission having been obtained beforehand.
