The short answer to your question is that you have been in a de-facto relationship for over 2 years, and if your ex-girlfriend wanted to cause you any financial trouble it would be on the basis of any assets that you held at the time of your relationship, not necessarily the new arrangement you have with your cousin.
However to be on the safe side, just make sure you have a very clear documented agreement with your cousin as to the arrangement regarding the $60,000 (date received, purpose, when it is to be repaid and if any interest or other charges will apply ect) and it should all work out for you
