will removing the thermostat out of a 5.7 ls1 engine do any harm?

You wouldn't want to remove a thermostat from any engine.
The thermostat's job is to hold coolant in the engine long enough for it to transfer heat from the engine to the coolant and then allow it to flow to the radiator. It then needs to stay in the radiator long enough for the heat to transfer to the air.
Removing a thermostat will allow coolant to flow freely without lingering a long enough for heat transfer so it will cause localized overheating.
Since the coolant also doesn't heat up then it will also cause driveability issues and an engine light.
