I have an 18 year old Maytag wall oven/broiler. The heat will ot settle where you select. It goes directly to 500 degrees. What can the problem be.

What do you mean exactly? Does the display go to 500 before it starts the cycle or reguardless of what temperature you tell the oven to cook at, the temperature always cooks to 500 degrees.

Yes the temp goes to 500 no matter where you set the dial
ok then that just sounds like you have a bad thermostat that will need to be replaced behind the knob that you turn to adjust the temperature, if they still make it for your model since your unit is 18-20 years old.
