my lg water dispenser button is stuck in the "on" (pushed in) position and it won't turn off

What Ice tray did you removed?

The bin that holds the ice cubes.

And if ever you would put that back in, the water would be dispensed again in front of the dispenser?

yes. the button that controls the ice and water on the front of the fridge seems to be permanently stuck in, or the "flow" position.

If I give you the service manual, do you think you are mechanically and electronically inclined to follow the trouble shooting guide?

I did asked because your problem would would need removal of the dispenser, checking the switches of the micro switch that triggers the water inlet valve, checking the electronics brain of the unit why it would not stop dispensing the water, checking the boards of the dispenser, etc.

All I can help you is give you the service manual.

i'm not that mechanically inclined to take advantage of a manual and deal with "micro switches" etc.
