48" is the widest fridge you can get.

As far as the widest fridge you get get for your 36" opening is 36 inches if it's a build it model refrigerator (they make 24", 36", and 48" models for built in), but they are much taller units so if you have cabinets up above they probably would interfere with a built in model.

Aside from that, manufacturers prefer 1 inch of space all around free standing refrigerators, so 34 inches would be ideal but in reality as long as it's not rubbing against the walls and it has at least 1/4" on both sides you should be completely fine.
