Hi, when you disconnected the battery your electronic throttle body most likely lost it's settings. You can try adapting the throttle body by turning the key all the way on without starting the car. Don't touch the gas pedal and leave the key on for a few minutes then turn it off and start the car and see if the a/c works. If you have no success you will need to have the throttle adapted with the VW tester.
Let me know if it works.
