With Photoshop or other editing software you could probably erase the old date and put a new one in.
Just out of interest, is there a reason you like the date imprinted on your photos?
Well, you can use an editing photo to obscure or erase the date and then put in a new one.I'm not much of a power user either so I can't really give you detailed info on this. Can you just not zoom in slightly and then crop out the date?
