Hi I'm Dr. Jen,
Fear responses in cats can be both learned and genetic. Cats have evolved to react to their environment, and fear of certain noises may have protected their ancestors in the wild (helping them to avoid bad weather, predators, etc.) The feline brain is normally very responsive to the environment.
Some cats may have learned to be afraid of certain noises in their lifetime. There are cats who just have a nervous personality and prefer quiet.
If the anxiety is leading to worse behavior such as aggression or refusal to eat, then it may be worth treating, but otherwise it's probably just normal for your cats.
