There is a known issue with the throttle which requires a replacement ECU.
Now the symptoms for this fault are different.
The fault shows up as the throttle completely fails, no response to pressing it, and its only able to be fixed by turning the ignition off and on again.
Even though your fault is different it is still very closely related. Given this I would strongly suggest that you ask your dealer to confirm in writing that your vehicle is not affected by this issue. If the warranty expires and this does fault does occur this will cost 500GBP+ for a replacement.
That said, you need to assess what is sticking. Many incidences like this are due to floor mats, so if you still feel confident in driving the vehicle I suggest removing the front floor mats, and also have a cursory check around the pedal box area to ensure nothing is hanging down from under the dash which could impede the pedal movement.
You then need to confirm whether there is a refusal of the pedal to return or whether its the throttle remaining open even though the pedal has returned.
If there is a particular time when this occurs (i would not recommend doing it whilst driving) pull over and put the car in neutral and simply sit for a while just revving the engine up and coming off the pedal with a foot movement the same as that which was causing it to happen when driving.
If the pedal is genuinely sticking then this is a significant safety issue and the dealership should be replacing the pedal assembly completely and double checking the fixings and connections to make sure its free to move smoothly.
Given they obviously found the issue and attempted a fix by lubricating something which did improve the problem. You now you need to insist that they replace the offending item as the attempted fix has not worked. It is most probably the pedal assembly but again I would ask the garage for a detailed description as to what exactly they did initially, this will then provide a record for any possible future re-occurrence..
