It's possible that the fuel pump is getting weak. You should test the pressure with a gauge, and if possible test the pump armature with a lab scope. That would be an even more conclusive test.
I understand. A fuel filter being plugged will cause your problem ALL the time. The fuel pump can intermittently fail though.

We have to do some testing at some point, and this same problem was in my shop 3 months ago with a bad pump.
