I just had a wheel alignment done on my 2011 Prius after purchasing new tires.
Now there is hesitation on acceleration. It's just not peppy like it normally is.
Could the alignment have been done incorrectly ?

I am sorry that you have not been helped yet.
If the only thing done was a front end alignment, it is unrelated. Where the tie rods are adjusted as well as the cam bolts for the struts to adjust the camber setting are at the wheel well area at the bottom, directly behind the tires. This is no where near the engine or any engine component that would affect acceleration
