I Have my portion of health insurance taken out of my check. Is the amount I pay to be deducted off of my gross income

No. it does not get deducted from gross income. It is reported on Schedule A (Itemized Deductions) while the gross income gets reported on the line of the form 1040 marked "Wages". If your itemized deductions are insufficient you use the standard deduction which varies depending on marital status, age and handicap or not.
