This happens all the time. Unfortunately there is not a dipstick; there is a fill plug and it's a pain to get fluid in there.
Also, no there is nothing out on the market yet that meets all of the requirements of the subaru fluid. You could use a full sythetic CVT rated fluid from like valvoline, but I wouldn't. Only the Subaru dealer fluid will work correctly and maintain you warranty.
To add fluid the transmission has to be idling in park at about 180-195 degrees. You add the fluid at the fill plug until it dribbles out.
