I went to Window 10 but did not like it so I have gone back to Windows 7, but since I have gone back all my documents that were in PDF files have changed to Adobe Acrobat, also I cant save anything as a PDF document.

When you right click a PDF file do you get an option to open it with Adobe Reader?

When you right click a PDF file and select Open With -> Adobe Reader, does it opens up the file in Adobe Reader then?

It opens up as Adobe Photoshop C3 and comes up in single pages on one sheet
