My father gifted his estate to me shortly before he passed away. Do I have to do anything with the bank he was making the payments with? other than keep paying the monthly amount?

So long as you continue making the payment the bank is prohibited by federal law from exercising a due on transfer clause. So, yes, just continue making the payments.
