I want to help you but am wondering if you can be more specific. Are you in fact looking to buy an in-line thermostat for a food hydrator? If so, can you tell me the brand name and model? That will make it easier to provide you with the correct information. I'm sure that there are thermostat parts for appliances. Thanks!

Can it be 120v vs. 115v? And it definitely has to be inline as opposed to a plug in thermostat? I'll wait to hear from you.

Yes, it can be 120V. A plug in thermostat would work as would almost any physical design including adjustable ones, as long as the temperature specs are satisfied. There are several large manufacturers of excellent thermostats of this type but they do not sell to individuals.
