Hi

There are several theories.

Most people accept that it is cooling of the blood that flows to the brain.

This can occur at two sites

1.The carotid arteries - these sit immediately behind the tonsils.

2.The aortic arch - from where the large blood vessels to the brain arise. This structure is adjacent to the gullet.

It is thought that the blood is cooled rapidy flows to the brain and causes spasm in blood vesels there causing pain.
