how do i jellify olive oil ?

I once ate at 'Per Se' Chef Thomas Keller's celebrated restaurant in New York and one of the courses i had was an olive oil jelly ,i have tried all sorts of gelling agents since to re-create this stunning effect but to no avail.....How do i jellify olive oil ???

The only information I can come up with is olive oil jelly is made from a olive oil mixed with gelatin. I have to believe it should be available commercially since it is used in many products. I can not verify that it is available, since I am unable to find a supplier. It is used for massages and used in beauty products. Perhaps you had a dessert, orange and mandarin foam on top of an olive oil jelly at Per Se?

Reply to Searcher2's Post: Gelatine alone is not enough to set the olive oil as it requires the presence of water at a molecular level in order to bind,i have even emulsified water and olive oil and then tried to set it with gelatine but the water sets and not the oil.
I did indeed have the dish which you mentioned in your answer and it was outstanding.....i notice from your contact details that you work at Per se ....any chance of the recipe ???? Thankyou for your help

All my contacts came up with no additional information. I did get a reply from the email I sent Per se. They would only tell me that the Olive Jelly was made there and was not available commercially. They would not provide the recipe.

Now for the good news. Food-grade Paraffin Wax, like used to make chocolates, will "jellify" oil. I am not sure of the mixture, but I have found it is used to jell several food products and medications. To "Jellify" Olive Oil heat the oil and add food grade paraffin.
