Question

Running 3 wire extension cord to a yard light pole with a black and a white wire. What do I do with the 3rd (ground?) wire in the extension cord?

Hopefully you are using SO cord or something similar and not an actual extension cord as extension cords are not rated for permanent installations and will likely cause you problems sooner rather than later.

That being said, your yard light should have a ground screw of near where the other wires are connected for grounding. If it does not, you should create one with tap/die kit and use a mechanical screw to bond the light fixture. You'll want to connect the green to a metal part of the fixture somewhere that is connected to the rest of the fixture to properly ground it.
