The clutch disc runs $208 from Saab, and installation labor is 5.5 hours.

Depending on your local shops labor rate, expect to pay in the neighborhood of $750 plus tax.

Edit to add: If you were to go aftermarket you could probably save a few dollars on the clutch disc/kit.
Also, if your area is anything like mine right now, shops may be willing to work with you on below-book rate pricing to get the job, as business has been really slow lately, at least where I live.

Local Saab dealer quoted $1725 for the "Clutch Kit" and installation. Sounds crazy high and wonder if the $208 for the clutch disc is all that would be included in the "Clutch Kit".

$208 is just the cost of the disc.
If they are replacing the pressure plate as well, add an additional $169.
Your car does not have a servicable throwout bearing, it is part of the slave cylinder, so no added expense there unless they are planning on replacing your slave cylinder? This is not typical on this repair.

It sounds like they are making up their own labor times to me,the only other thing I can think of is if they are trying to sell you a flywheel too, that would add $700 or so to the bill. I don't know why they would do that though, the cost to resurface is usually under $50 if it is necessary.

I would verify the breakdown of parts/labor in their quote and see if they are just hammering you on labor or if they are trying to sell you a flywheel you likely don't need, etc.
Check with another dealer/swede specialty shop and get another quote as well; that price is very high.
