What nutrients - minerals/vitamins do soy beans contain? What are the health benefits of eating soy beans (say rather than meat). Eg - good for hair? good for heart? etc.

Hi and thank you for your question. According to the Food and Drug Administration says foods containing soy protein may reduce the risk of coronary heart disease. Foods that meet the FDA guidelines can label their products with this claim. 25 grams of soy protein per day ,as part of a diet low in saturated fat and cholesterol, may reduce the risk of heart disease by reducing blood cholesterol levels. Soy contains protein, isoflavones, saponins, and phytosterols. Foods that contain whole soy are a good source of protein because they provide all the amino acids that people need to stay healthy.Soy foods are a great source of protein and contain other important nutrients, such as fiber, B vitamins, and omega-3 fatty acids. Foods containing soy protein are also a healthy alternative to meats and other animal products that contain cholesterol and saturated fat. According to studies, Soy may also

Improve plasma lipids (e.g. lower total cholesterol, LDLs, and triglyercides)

May alter how the liver metabolizes cholesterol (possibly improving the removal of LDL cholesterol)

May increase the elasticity of arteries

May reduce the build-up of plaque inside arterial walls

lower incidence of hip fractures

lower blood pressure
