Hello,
sounds as if you need a new seat for the needle, if there is any gunk build up in the gas tank or fuel lines it maybe getting into the carb, at the same time if the carb is all gunked up the same thing will happen as well. Also inspect the float for any damage

Is the tank a built in or accessory tank?
Is the tank clean and did you install a new fuel filter?
It sounds like you are either getting something in the carb making the needle stick or there is a problem with the carb/metal.
It does not take much at all to get into there and cause the needle to stick, is it getting stuck close or open?
Well that is a while to wait, just make sure everything is assembled correctly and then I would inspect for leaks, if the fuel leaks out the needle will open because as the fuel enters the bowl the float raises which causes the needle to close and when the gas goes out of the bowl the float lowers, now normally then a leak would cause the needle to open and not stick, however the float maybe getting caught on something and keeping the needle most of the way closed except for a tiny leak then when dry it can sometimes stick to the seat.
