This is an interesting question, and one you would probably get many different answers to, depending on who you ask. Yes, there are millions of dogs that are euthanized each day because they cannot find homes. Yes, dogs are overbred. However, you sound like you take excellent care of your dogs, and you obviously are not in this for the potential money to be made. I think that you should consider how you would feel if she did have another litter and didn't have any females at all (not likely but possible). Then you should consider what you will do with the rest of the puppies. Can you get homes lined up in advance? Can you keep and care for any puppies that you might not be able to find a home for? Would you be willing to have your dog seen by her vet and have a senior workup (full blood and thyroid panel, urinalysis and x-rays) done BEFORE breeding her again? She is getting older now, and it would be a good idea to have her checked out before she has a final litter. I am owned by bulldogs myself (american bulldog and bull terrier), and I completely understand what you mean by liking a specific form and blood line. I don't blame you for wanting to preserve the beautiful characteristics that your best friend has, and I think that if done responsibly you should be able to have your puppy. If your dog is given a clean bill of health by her vet, the decision to breed again at that point will be yours and yours alone. You are experienced and know the risks and what to expect. Weigh your options and follow your heart. If you decide not to breed, you may be able to find another breeder that has dogs out of the same bloodline. I know that this is not exactly the same, because it won't be a pup from your dog, but it's something to consider if all else fails. Please try not to stress over this decision, if everyone were as interested in preserving this beautiful breed as you are, things would be much different in the dog world.
