You can work on training at home while she waits for her vet appointment.
I'd start with the nothing in life is free program which you can read about here

I'd work with her on clicker training and this site has videos (just go down the page below the ad to see them)

The clicker can be the key to getting right behavior from your dog as a way to stop the wrong cat chasing behavior.
Here are two articles that may help you

Bringing her inside on a leash so you have control can be a help. So can a crate for her inside.
Working on training of your control over her and her self control may get her to be safe with your cats.
For dogs chasing is a lot of fun and very exciting.
I'd make sure to have dog free safety zones in the house for box, food, and cat naps even if you get the dog pretty steady with your cats.
If you do not find you can handle the needed trainng (or others in your home cannot) then you may want to rehome her to a single dog home. Spaying her will make that a bit easier as you won't have to worry about the people who want to breed pitbulls wanting her.
Hope this helps you!
