They do make special wrenches for the plumbing fittings that go in between the ridges on the fittings. Sometimes this tool is not required if you have allot of strength but it sure makes the job easier, most home improvement stores have them and they come in different sizes.... I am use to them being called a Flair it wrench.... Hope this helps, IF you have more questions or concerns please feel free to contact me.... below is a picture to help you identify the tool...
Also you could have sea tech fittings, these are quick connect fittings that you simply push in and and pull the line off, make sure for either application that the water source is shut off and you relieve any pressure in the lines prior to dis-connecting...
