These can be frustrating cases - when your kitty that you love and care for so much acts this way!
One recommendation is to have something to get them out of the "attack trance" they are in.
Options would be coins in a can to shake, or a spray bottle to squirt them with, or a bicycle bell to ring.
Many times this will redirect their attacking behavior and wake them from their trance.
I have clients that have used this product (Feliway) which emits pleasant phermones/hormones that are supposed to decrease stress in cats and behaviors such as this. Some have had great experience with this.

Unfortunately - not of these may be a quick fix - but behavioral problems are almost never a quick fix and will require some training and time...
