hi its accessed via DIS or ISTA diagnosis.if the car is damaged it will req'd to be recovered to the dealership.also it depends on the damage to the vehicle.

What is DIS or ISTA diagnosis? Also as my original question stated, what information is stored?

DIS is the diagnostic machine and software that is used at BMW main dealerships to access the ECU's on the vehicle.
Some of the major info that is stored in various ECU's on the car at the time of impact is as follows:
Vehicle speed at moment of impact (Airbag, DSC)
Traction control on/off (DSC)
Steering angle (DSC)
Gear selected(SMG models only)
Seat belts worn (Airbag)
Lights on/off (LCM)
Key used (EWS)
