Question

I want to make cherry brandy and vodka from our abundant crop of cherries in the backyard. I bought pint canning jars and good vodka and brandy yesterday.

The problem I'm having is that every recipe says to sterilize the jars first. I only have a large soup pot available. I put the jars in the dishwasher last night and boiled the lids last night. I was planning to make it this morning, but now I'm worried about getting sick if I don't sterilize the jars right.

My questions are:
1. Is running the jars through the dishwasher enough and, if not, what can I do if I don't have a huge pot to boil them in?
2. Do I have to fill them immediately while the jars are hot or is it safe to use the jars I put through the dishwasher last night and the lids I boiled last night?
3. Wouldn't the alcohol also help protect the insides from salmonella or whatever one could get from brandied cherries?
4. Does it matter whether or not I stone the cherries for safety?

Hello mimih,

Actually there are quite a few recipes I have found which do not even call for sterilizing the jars. They all say to place the cherries in a clean jar, which obviously you would want to do anyway.

Washing the jars in your dishwasher will not really completely sterilize them. To be sterilized they should be placed in boiling water for approximately 10 minutes. If you do not have a very large pot, then you may just have to sterilize these one or two at a time in the soup pot that you have. Your other option is to just make sure the jars are very clean. Since you have already run them through the dishwasher, you may now try filling the jars with boiling hot water and letting them sit with the water in them for about 10 minutes. This will be as close to sterilizing as you can get without actually putting the jars themselves in boiling water. Once the jars have been cleaned, you should fill them as soon as possible.

As far as stoning the cherries, that is your option. There are no safety issues with leaving in the stones.
