Absolutely, this could be a case of employment discrimination under Title VII and your state anti-discrimination laws. Although you should have contacted the EEOC before quitting, you should still do that now asap. File a complaint with them and ask for a referral to an employment law attorney in your area.

TK Gehres, thank you so much for your reply. I didn't file a complain with the EEOC while I was there because I just felt that I would just move on to somewhere else and just forget this miserable experience and find a job with a company that will hopefully offer me advancement opportunitities. When I moved out here to Vegas my family were the ones who felt that I should look into this further as they believe I was discriminated against. I personally feel that I should have spoken to the the VP of Labor Relations at the company but I never did only I voice my concerns with my supervisor and Vice President of the department I worked in.
Well, you spoke with the individuals you needed to in order to support your claim. The VP of Labor Relations likely would have done nothing to assist you if your immediate bosses were unwilling to.
The EEOC has strict time limitations, so don't delay contacting them.
