I'm convertingfrom steam to hot water. Can I use PEX piping to replumb and still set my water temp at 215 degrees?

Cross-linked polyethelyne (PEX) can be used in this temperature range. It can be used with temps as high as 248 degrees F. depending on the actual product. Always refer to your product guide when attempting higher temperatures.
