Continental, or LS as both used a 32 valve V8.

The Continental is not known for having ignition coil problems so I doubt that the problem is ignition related. However it is a possibility.
However, can you describe what you are feeling to me a little better?
When you say it is missing or starving at about 30 to 40 mph, what are you feeling?
It sounds like you may have a coil shutting down. The problem is that vehicle has 8 coils (at $100 per coil). Not knowing when the last time the vehicle was tuned up either.
What I would do, to save money, is take the car to a dealership and have them pull what is called the Mode 6 data out of the computer. This will give them (and you) a precentage of misfire per cylinder. That way you can isolate which coil is causing the concern.
I would also look at the air filter on that car, as a incorrect or improperly fitted air filter can cause problems with the Mass Air Flow sensor (located in the air filter housing).
That filter housing can be a bit of a pain to get out or back in.
