The purpose of a cover letter is to generate interest in you to know if your resume is worth looking at.
So you should not address this in the cover letter. You should address it in the interview.
If you feel you really need to put this in the cover, then treat it as a positive.
For example, a life time learner, and seeking higher levels of responsibility, I have quickly garnered cross industry experience while progressing through higher levels of responsibility.
But in all honesty, this should not be included at all in the cover letter.
