If the mechanic hired to fix my transmission voids my warranty,and hides my bill of sale,changes documents,and keeps my car over a month before filing the claim, also puts 300 miles on it just driving around, can i legally do anything about it?

Ya, sue him. He commited fraud, Tampered, and basically stole and drove your vehicle. I would suggest you file a complaint with the DA, and state consumer affairs.
