I would check the mouth for broken or fractured teeth as well as a gum problem or something caught in between the teeth such as plastic, stick etc. IF there is any discoloration of the teeth or gums the that may be the cause. The gums should bulge a little around each tooth , if there is a smooth area then that can mean gum disease. Fractured teeth may be hard to see if they are in the back or near the gum line. Feel around for any mouth ulcers or sores.

Also excessive drooling can be a sign of nausea so watch his food intake.

Another problem to watch for in large breeds is bloat which is when air gets into the stomach and can't be released. This is life threatening. Excessive drooling, dry heaving, abdominal distention, and restlessness are all symptoms of this. If you see these signs bring the dog to an Emergency Vet as there is no time to waste.
