this is done from the menu/settings screen.

Your phones directory system (phonebook) can hold up to 30 entries.

Grab a handset, and while in standby mode (not on a call) press MENU/Select 3 times

This puts you into directory mode. Key in the number, then press Menu/Select to move to the name field.

Key in the Name using the number buttons, then menu/select again to save the entry. Repeat as needed for additional numbers.

when I try to key in names it keys in #'s not letters.

You aren't pressing the keys enough times,

there is no actual keyboard, so you have to use the digits to enter names. So to enter an B for example you would have to press the 2 several times to cycle through each option (2abc etc), stopping when you get to what you want then moving on to the next letter.
