"The Pilgrim goose is known for being calm and personable. It is the only American goose breed that is auto-sexing. "Day-old males are silver-yellow with light-colored bills, in contrast to the olive-gray females with their darker bills. Adult ganders [males] are mostly white, usually with gray rumps (which are covered by the wings) and traces of color in the tail and wings. "
The Embden ganders should be pure white with no gray to them at all.

You may have to move the feathers to see the gray color (that is what you meant right?).
The info I have is the true Pilgrims have the gray tone in their feathering.
If you are just trying to decide which you have the Embden are way more likely to be found than the Pilgrim are according to the info I've seen.

There really should be a big difference in adult weight between the two breeds also.

"There are some ways to tell the difference, if the breeds are true to type. Pilgrims are generally shorter and smaller, classed as a medium sized goose, whereas embdens are heavy class, taller, heavier. It is permissible, and often seen, for male pilgrims to have gray feathers on their back or tail or under wings, etc., especially when young. Young embdens sometimes exhibit gray feathers until their first molt, but true embdens will have no gray feathers eventually. Embdens have startlingly blue eyes, pilgrims more of a gray-blue."

You never did say why you wanted to figure this out - did your two flocks of known parentage get mixed? It sure sounds like the blue eye comparison would be your best bet.
